Correct chebureks.
(Modular, неоднократо the checked up recipe).
At first we prepare the dough:
Take:
- 4 glasses of a flour (glass volume - 250 ml);
- 1.3 glasses of water;
- 1 egg;
- 1 table. A vegetable oil spoon (it is possible any oil, fat);
- 0.5 teaspoons of salt.
To boil water with salt and oil (oil gives to ready chebureks characteristic "пузырчитость").
Immediately to make in it 1/2 glasses of a flour, trying to stir lumps and to allow to cool down (заваривание flour parts does the dough soft and plastic).
To add egg and to mix (egg raises "пузырчитость" and durability of the test, a little reducing plasticity and softness). Постепено adding other flour to knead the dough. The dough should not stick to hands if sticks to add a little more torments. To allow to be insisted not less than 1 hour (it is possible though 10). In process выстаивания 1 time перемять.
While the dough is insisted we will prepare forcemeat:
Take:
- 700 г meat (mutton it it is final..., but any meat or a mix) is possible;
- 350 г onions;
- 0.5 glasses of water;
- Salt, pepper, spices to taste.
Meat to pass through a meat grinder. Who does not wish to potter to pass and onions through a meat grinder to add salt, spices and to pass to point 3.
The onions small to cut, перемять (to beat off толкушкой) with salt, pepper and spices. To put in forcemeat.
To add 0 glasses of water or 1 glass of kefir which except flavouring colourings, possesses wonderful property to connect crude forcemeat (forcemeat does not spread) and to give a liquid to a ready product. All is good for mixing.
We Fry chebureks:
Cutting off the dough for balls in size with a ball for table tennis to unroll in a flat cake in the thickness of 1 mm. To level forcemeat (hardly more, than the test) on one half of flat cake to cover with second half and edges to press down. Прокатать on edge the special machine or edge of a saucer and to check, that on a seam there were no tears or cracks.
In a pan to pour on 2-3 sm of vegetable oil, and having waited while oil will heat up, to fry from 2 parties on average fire, not covering, before formation of zolotisto-brown colour. It is possible to fry simply also on a frying pan with smaller quantity of oil. After жарки the size of a cheburek will be about an average palm.
